Pickled Red Onion
1 small red onion, thinly sliced vertically
2 teaspoons sugar
1/3 cup cider vinegar
1/2 teaspoon salt
Bring vinegar, granulated sugar, and salt to a simmer in a small saucepan. Stir in onion and remove saucepan from heat. Let stand, stirring occasionally. Serve once cool or store in tupperware in the refrigerator.

We used these on venison tacos we made last night (yes, still working on the venison in the freezer) along with some cilantro and fresh avocado. Great use for them!
